Sancerre Pascal Jolivet 2021

The Sancere by Pascal Jolivet is a very elegant white wine, expression of Sauvignon from three different vineyards from the Loire Valley. The 50% of the grapes is harvested in Les Caillottes, a vineyard characterized by a very calcareous soil, which gives finesse and aromatic sharpness; the 30% comes from Les Terres Blanches, in which that are a soil rich in clay and limestone, responsible for aromatic richness; Silex, famous for it stony soil which gives the grapes minerality and freshness.

The Sancerre by Pascal Jouet represents the complementary union from this different terroirs. The winemaking is different for vineyard to develop and valorise the different expressions of the grapes. The final blending allows to gain a great balance. The indigenous yeats for the fermentations are used to ensure the authentic expression of the terroir and the steel vats protect the primary aromas of the grapes.

This Sancerre stands out for aromatic finesse and complexity. It smells like white fruits as pear, with hints of gooseberry, verbena and wet straw. The taste is deep, savory and fresh. It is perfect for many food pairings: appetizers, elegant fish dishes and tasty cheeses, like the typical goat cheese from the Loire Valley.
