Coda di Volpe 'Cerere' Ocone 2015

The Coda di Volpe by Ocone embodies a hope; is matched to Cerere, a maternal divinity of the earth and fertility; a goddess of crops can be directly connected to the sound luxuriance of white grape vineyards of this winery that began its activities in 1908 thanks to the visionary passion of Giuseppe Ocone and that in the following decades and is quickly becoming a business enterprise and agricultural tier. Today Domenico Ocone and Nicola Pastore utilize modern technology to the service of tradition, history, environmental sustainability. We are in the vineyard La Madonnella, 10 hectares on an hilly area, planted with mainly organic fertilizers. We are in the town of Ponte, with exposure to the South-West, on soils of medium consistency rich in clay, placed at about 300 meters above sea level. Here, after a short maceration on the skins at a low temperature, Coda di Volpe "Cerere" by Ocone is left to mature for a few months in steel to not modify in any way the intrinsic characteristics of this great grape, too often forgotten. An ancient vine, from Roman times, not very vigorous, but which gives rise to wines of great aromatic complexity.
