Wine Box Alta Langa Brut 'Toto Corde' Cocchi 2016

Alta Langa Brut "Toto Corde" is one of the top sparkling wines from the prestigious Giulio Cocchi winery in Asti. An authentically Piedmontese Metodo Classico, one of the pinnacles of the Alta Langa appellation.

Giulio Cocchi's "Toto Corde" comes from a classic blend of Pinot Noir and Chardonnay from a vineyard with great sun exposure. This is a sparkling wine Millesimato, so it is born from a single harvest. The first fermentation takes place in steel vats and lasts almost three weeks. At the end of this period the wine is left to cool, to let the sediment settle, then bottled. The second fermentation takes place in the bottle, as required by the Metodo Classico or Champenoise method, where the wine ages on the lees for more than 36 months. During this aging period, the bottles rest on wooden trestles in the cool, dark rooms of the cellar, subject to the practice of remuage and then cold degorgement.

"Toto Corde" is a Latin locution literally meaning "wholeheartedly," employed in biblical texts with the meaning of "willingly." An apt name for this Brut by Giulio Cocchi, capable of expressing its freshness and generous variety of aromas. Indeed, its aromatic spectrum is broad and complex, played on notes of dried and candied fruit. On the palate it proves to be rich in matter and volume: it refreshes the palate and closes with fascinating almond and mineral hints, very fine and elegant.
